PEA AND HAM SOUP WITH MINT CREAM

 Ingredients

Pea and Ham Soup:

  • 400g frozen peas
  • 230g water
  • 150ml cream
  • 2 Smoked Bacon Rashers
  • 1/4 Chicken stock cube
  • Pinch of Sugar/Salt
  • 50ml Milk

 

Mint Cream:

  • 100ml Whipping Cream
  • 10 Fresh Mint Leaves, chopped
  • Pinch of Salt

 

Method

 

  1. Add the peas, water, cream, stock cube, salt and sugar to a medium sized sauce pan and bring to the boil.

 

  1. As soon as it begins to boil blend immediately until completely smooth, adjust the seasoning to taste and add the milk if required to adjust the consistency.

 

  1. For the mint cream simply whip the cream to soft peaks then add the chopped mint and a little salt.

 

  1. To serve pour the soup evenly into four bowls, place a spoon of mint cream into the centre and garnish with a fresh mint sprig.
