LASAGNE OF SAUSAGE MEAT, SPINACH AND CRÈME FRAICHE

(Serves 6) 

Ingredients

  • 500g Sausage Meat
  • 150g Button Mushrooms
  • 1 Onion (diced)
  • 2 Cloves Garlic (Chopped)
  • 1 Red Chilli
  • 100g Frozen Spinach
  • 150ml Crème Fraiche
  • 1 Tbls Oil
  • Salt & Freshly Ground Pepper

Tomato Sauce

  • 1 Tin Chopped Plum Tomatoes
  • 2 Tsp. Tomato Puree
  • 1 Tbls Dark Brown Sugar
  • 1Tbls Picked Thyme Leaves
  • Dried or Fresh Pasta Sheets
  • 150g Grated Mozzarella

Method

  1. In a hot frying pan add a little olive oil and the sausage meat and fry until lightly browned.
  2. Add the onion, chilli and garlic and mushrooms cook for 5 mins more over a low heat stirring occasionally.
  3. Stir in crème fraiche and chopped spinach and allow too simmer for 1-2minutes.
  4. For the tomato sauce simply put all the ingredients into a small pot bring to the boil and season with salt and pepper.
  5. In an oven proof dish, spoon a layer of sausage mixture in the bottom of the dish cover with a layer of tomato sauce then a layer of pasta and continue this process three times and finish with a top layer of grated mozzarella.
  6. Bake at 190c for 15-20 mins.
